The origins of the Taco are not certain. One popular theory is that they originated in the 18th century in the silver mines in Mexico. In the mining community, the word “taco” described the tiny explosives made out of two pieces of paper and gunpowder that they would use to blow shit up. Some believe that tacos predated the arrival of the Spanish in Mexico. According to anthropology experts, there is some evidence that suggests those living in the Valley of Mexico ate fish tacos. Ultimately, we can thank Taco Bell for bringing tacos to the masses in the US and popularizing them.
It is no great secret that I am a taco lover, but why do I love them so much? They’re amazing little handheld tortilla pouches of deliciousness. They are an obvious choice for any meal, or after a long night of drinking, and they’re an excellent cure for the munchies. The hardest part of eating tacos, is choosing the combination of savory meats, and delicious cheeses that you want to enjoy today.
If the perfect Taco Tuesday existed, this is what it would look like for me.
These insanely tasty Chorizo and Potato tacos make a delightful breakfast, and the filling can be made ahead and warmed up for a quick on the go meal. I love them with salsa and hot sauce. YUM!

I’ve been saving the best for dinner. These Bang Bang Shrimp Tacos are a treat! I recently traveled to Florida for the first time. While there I tried Bang Bang Shrimp and I was hooked. This recipe is a pretty good copycat for what I had. The key though is to get FRESH shrimp if at all possible. Trust me. It makes all the difference.
After dinner has settled, you’ve finished cleaning up the kitchen, and you want to relax with a sweet treat before bed. Lucky for you these Cinnamon Strawberry Cheesecake Tacos only take about twenty minutes to make and they are a perfect combination of textures and flavors.
