I am dreaming of fall’s cool, crisp nights around a fire outside. How can you not love nights like those?! It sounds like a good date night, that doesn’t require you to leave your own home. Just put those kids to bed and go outside. What would make that date night perfect is a nice steak dinner and a bottle of red wine. I have partnered up with an amazing sauce company, Grand Traverse Sauce Co., to come up with a recipe using one of their sauces. I did a full interview with the owners of Grand Traverse Sauce Co. over on A Mom and her Momtourage, plus there are a few other recipes using the Girl Boss hot sauce!!
I’m not here to make your date night difficult, in fact making this steak dinner is super easy. And, yes I know a Hollandaise sauce sounds scary {just as scary as it is to spell}. But I am here to tell you it isn’t anything to be afraid of! I whipped up this sauce in less than five minutes.
Let’s get to grilling!!
What you will need for your date night dinner:
- Steak (I used a petite sirloin. I would have used filet minion, but they weren’t on sale.)
- 2 egg yolks
- ½ a lemon
- ½ tablespoon – 1 tablespoon of Girl Boss Hot Sauce (Adjust according to your level of spiciness. I like it spicy so 1 tablespoon for me.)
- ¼ cup (half a stick) of melted butter (It needs to be hot)
- Salt and Pepper to taste
Let’s get to making the Hollandaise sauce.
Pull out your blender or immersion blender (which is what I used, due to my blender being packed). Put the egg yolks and the lemon juice into the blender and give them a mix. Then slowly add your hot melted butter until it is combined. You do not want to dump all the butter into the blender at once because you will curdle your eggs and nobody wants that. You will have a thick creamy sauce, time to add the Girl Boss hot sauce in and a little salt and pepper. Give it a final whiz up in the blender and there you go!!
Steak time!!!
Now, I am going to admit, my steaks are pretty amazing, but it is because of the grill that I have, and I smoke them a tiny bit before actually cooking them. I fell in love with a Traeger grill a few years ago, while at a friends house and was insanely jealous of their grill. So I bought myself one during a Black Friday sale and never looked back. You don’t need a Traeger to cook a fabulous steak, but I do know it makes everything delicious.
I bring my steaks up to room temperature with some salt on, for about an hour before cooking, depending on the thickness of my steak. Once they are close to room temperature, turn on your grill to high heat. You can also do them on the stove if that is your preferred way or you don’t have a grill. I like to get my grill screaming hot and place the steaks on it for about five minutes or so before flipping for another five minutes. I do like a medium rare steak, so cook your steaks to your desired steak doneness. When it’s been ten minutes I pull them off and let them rest for at least 5 minutes before digging in.
To Serve.
When my steaks had rested and my sides were done it was time to plate. For my sides I cooked pan fried potatoes and grilled corn. I poured the hollandaise sauce over my steak just before I was ready to eat. Oh my goodness it was so good.
