My son loves everything mint, and adding chocolate just makes it even better. These mint chocolate chip cookies are perfect for him. I tried dyeing these with a safe dye for him since we are a dye-free family. But every safe dye I used ended up baking to pink. So I left out the dyes to be a safe fun treat for my kiddo. If you would like these to be extra fun for St. Patrick’s Day, add some green dye into the mix.
Here’s what you’ll need:
1 cup of butter, softened
1 cup sugar
2 large eggs
1 teaspoon peppermint extract
2 tablespoons milk
2 ½ cup all-purpose flour
½ teaspoon baking soda
¼ teaspoon salt
2 cups of milk chocolate chips
Let’s get to baking.
Preheat your oven to 375 degrees. Get your cookie pan(s) ready with some baking parchment.
Cream together the butter and the sugar, until light and fluffy. Add in the eggs one at a time, beating to combine in between. Then, add in the peppermint extract, and if you are using some green food dye (sorry I don’t have measurements for you as we do not use them). Combine all the dry ingredients together and add in half of the dry ingredients, mix. Then add in the milk, mix the milk in, then add in the rest of the dry ingredients and fully combine. Once all the dry ingredients are incorporated add in the chocolate chips and carefully mix in.
Spoon out heaped tablespoons of the cookie dough onto the cookie pan, and bake for 9 to 11 minutes. Cool the cookies on the baking sheet for a few minutes before transferring them to a cooling rack.
These mint chocolate chip cookies would be perfect for a fun St. Patrick’s day party or treat in your kiddos lunch boxes.
