There are a few things that come to mind when I think of Fall. First is the changing of the leaves and the smell of bonfires. But those are closely followed by the need for a great bowl of soup to warm you up on a cool Autumn evening. Yes, chili and a smooth Butternut Squash soup would probably be top of that mental list, but I have a few soups that, over time, have become staples to our harvest time cooking list that I think you should add to your list as well.
Hamburger Soup
I have always been a believer that there’s nothing quite as hearty as a great vegetable soup. Of course, I grew up in a house where vegetable soup always had some kind of protein, whether it was chopped up chuck roast, some stew meat or just a nice helping of ground beef. As an adult, I have experimented with different recipes, trying my own ideas out and have learned things along the way. But out of all of the attempts, failures and successes, one stood out from the crowd: The Pioneer Woman’s Hamburger Soup. And as for a mouth-watering side to this scrumptious soup, I love to also make The Pioneer Woman’s Seasoned Buttery Crackers.
Bacon Cheeseburger Potato Soup
This next soup is one that has earned a spot in the regular rotation at our table. If you haven’t figured it out quite yet, my family loves a good hearty soup. You know, one that truly “sticks to your ribs”. Not only does Chungah Rhee of Damn Delicious deliver a mouth-watering meal, but she also keeps you coming back for more. Lasagna Soup
This was a recipe that I just could not imagine going well when I first stumbled across it. I mean, I love lasagna. And I don’t mean kind of like, I mean love to love to love lasagna. And I absolutely adore a good soup. But how on earth are you going to translate lasagna into a workable soup? Well, let me tell you, Jen from Carlsbad Cravings proved me wrong in so many ways. If you love lasagna as much as I do and are looking to add something to your fall soup list, this One Pot Lasagna Soup will not disappoint.
Kentucky Burgoo
This was a soup that I was terrified to try initially and that seemed daunting to make if I am going to be completely honest with you. If you are roaming around the wilds of Kentucky and hear the mention of Burgoo, it can be a bit concerning as you might not know what you are going to get. In some corners of the state, the protein that will be in this stew could be Venison, squirrel, rabbit, wild boar… the list goes on and on. But after doing plenty of looking around for a recipe that included ingredients found in the local grocery store and not the local hunting grounds, I found Chef Ouita Michel’s recipe for a mouth-watering Ultimate Kentucky Burgoo. But this recipe still isn’t for the faint of heart as it takes a good 4-5 hours to make from start to finish.
