There isn’t much that sounds better than a delicious cold popsicle on a hot summer day. Here in Arizona, the temperature has already hit triple digits and we’re ready to cool down. What better way to do that than a nice cool treat?
Since popsicle molds tend to vary on how many ounces they hold, I listed how many ounces each recipe makes. If you need to adjust the recipe to fit your needs, feel free! Personally, I find the small popsicle molds perfect for toddlers since they usually don’t eat them as fast as us adults do. This makes for less mess to clean as they melt.
Here are three simple kid-approved popsicle recipes currently being devoured by my family:
Cherry Limeade
Prep time: 5 minutes
Yield: about 20 ounces
Ingredients:
2 cups pitted cherries (fresh or frozen)
½ cup lime juice
¼ cup sugar
Combine all ingredients together in a blender and blend until smooth. Pour the mixture into a popsicle mold, insert a popsicle stick and freeze for at least 4 hours or overnight.
Note: Use freshly squeezed lime juice. If you use lime juice from the freezer section of your grocery store, the popsicles won’t form properly.
Orange Coconut Creamsicle
Prep Time: 5 minutes
Yield: about 20 ounces
Ingredients:
1 cup Orange Juice
¼ cup Sugar
2 Containers Vanilla Coconut Yogurt (10.6 ounces)
Blend all ingredients together well. Pour the mixture in the popsicle mold, insert a popsicle stick and freeze or at least 4 hours or overnight.
Strawberry Kiwi
Prep time: 5 minutes
Yield: about 18 ounces
Ingredients:
2 cups of Strawberries (fresh or frozen)
3 Peeled Kiwis
¼ cup sugar, divided
Blend the strawberries and all but 1 teaspoon of sugar well and pour into your popsicle molds leaving some room at the top for the kiwi. Blend the kiwi and remaining teaspoon of sugar until smooth and pour on top of the blended strawberries. Insert a popsicle stick and freeze for at least 4 hours.
Note: I have a high powered blender that allows me to easily blend frozen things, but if you are not comfortable blending frozen strawberries in your blender, you can blend fresh strawberries. Use the same directions, but allow the strawberries to set in the freezer for an hour or two so they harden and the kiwi can sit on top without the two mixing together. Or you can let them mix together if you want! Freeze for the same amount of time.
